Ingredients

Fresh fish fillets of your choice, two pieces per skewer
Broccoli florets, two florets per skewer
1 red chilli
2 cloves garlic
Olive oil

Method

Step 1
Pre-soak bamboo skewers and dry before threading with ingredients (this step is to avoid the sticks burning).
Step 1
Cut chilli and garlic finely then mix together with one tea spoon of olive oil. (ad more chilli and garlic if using more then 800g of fillets)
Step 2
Pre-marinate the cubed fish pieces with the garlic, chilli and olive oil mix. Coat well.
Step 3
Pre-boil broccoli pieces and any other vegetable to soften slightly before threading.
Step 4
Thread the ingredients onto bamboo skewers. Add to bbq hot plate or grill.
Step 5
Cook well turning skewers frequently to ensure even cooking and to avoid burning. Once cooked to your liking, remove from heat and serve immediately. Great to serve with a colourful fresh salad.
